Angostura Savoury Pork Ribs

Ingredients:

  • 4 cups Barbecue sauce
  • ½ cup Brown sugar
  • 1 pinch Black pepper
  • 2 oz Margarine
  • ½ tsp Chili powder (optional)
  • 1 tsp Paprika
  • ¼ cup Yellow mustard
  • 1 tbsp ANGOSTURA® Worcestershire sauce
  • 1 tbsp ANGOSTURA® soy sauce
  • 1 cup Apple cider vinegar
  • 1 cup Ketchup
  • 2 tbsp ANGOSTURA® aromatic bitters
  • ½ cup Apple Juice

Method:

  • Combine the above ingredients in a saucepot, bringing to a boil and simmer for 10 minutes to allow the flavours to infuse
  • Please note that this is a basting sauce to brush onto your meats for grilling; you can add some water or more apple juice to make it thinner

Pork Ribs:

  • 1 slab Pork ribs (approx. 1¼lb)
  • 1 tbsp Italian Seasoning
  • 2 tbsp Garlic powder
  • 1 tbsp Onion powder
  • 1 tsp Chili powder
  • 1 tbsp Paprika
  • 1 tsp ANGOSTURA® aromatic bitters
  • Salt & pepper to taste

Method:

  • Combine the above ingredients in a bowl and rub onto clean ribs
  • Allow to marinate for at least 4 hours in the refrigerator or overnight
  • Pre-heat the oven to 350ºF and roast for approx. 1½-2 hours
  • Baste every 30 minutes with the BBQ sauce
