Angostura Oven Roasted Chicken Cutlets With Spice Rub

Ingredients:

  • 12 Chicken thighs (large), boned
  • 4 cloves Garlic, minced
  • 1 tbsp Olive oil
  • 1 tbsp ANGOSTURA® aromatic bitters

Spice Rub:

  • 1 tbsp Cumin, grounded and roasted
  • 1 tbsp Chili powder
  • 1 tbsp Coriander seeds, grounded
  • ½ tbsp Cinnamon, grounded
  • ½ tsp Nutmeg
  • 1 tbsp Brown sugar
  • 2 tsp Salt
  • 2 tbsp Vegetable oil

In a spice mill or food processor or blender, process all the ingredients for the spice rub.

To prepare chicken:

  • Mix spice rub with ANGOSTURA® aromatic bitters, garlic and salt
  • Rub chicken pieces all over with marinade and leave for about 1 hour
  • Preheat oven to 400F, place chicken pieces on a baking tray and roast for about 20 minutes until done
