Angostura Caribbean Fish Accras

  • 1lb Fresh boneless fish fillets, cut into 1-inch pieces
  • 1 cup Chopped fresh herbs, chives, parsley, oregano, chadon beni
  • 1 tsp Hot pepper sauce
  • 2 tbsp Fresh lime juice
  • 1 Onion, chopped
  • 2 Pimento peppers, seeded and chopped
  • 1 cup All purpose flour
  • 2 tsp Baking powder
  • 1 tbsp ANGOSTURA® aromatic bitters
  • ½ cup Milk
  • Salt and freshly ground black pepper
  • Vegetable oil for frying


  • Place fish, herbs, pepper sauce, lime juice, onion and peppers into the bowl of a food processor
  • Pulse or process briefly to break up and coarsely chop
  • Place into a bowl, add flour and baking powder, stir
  • Mix bitters with milk
  • Add to mixture with salt and pepper
  • Stir; mixture should be like a thick batter, add more milk if mixture is too dry
  • Heat oil in a frying pan, drop by tablespoonful’s, fry until golden brown, drain and serve with Angostura® tamarind chutney
  • For the Angostura® tamarind chutney, stir in one tbsp ANGOSTURA® aromatic bitters into ½ cup tamarind chutney, add ¼ tsp allspice powder
